Your Holiday Menu is Missing These Recipes from Yara, The Dietitian Chef

Are you on the lookout for healthy and yummy-licious recipes to add to your holiday menu? 

Look no more! Yara, the dietitian chief, has created six recipes just for you to indulge in as the holiday approaches.

  1. Beetroot Bruschetta 

INGREDIENTS:

  • 500 g beetroot
  • 125 g feta cheese
  • 2 Tbsp balsamic vinegar
  • 100 g toasted walnuts, lightly crushed
  • toasted bread to serve

METHODS OF PREPARATION:

  • Wash and boil the fresh beetroot until soft and cooked. 2. Peel and slice into 1 cm pieces and place in a bowl.
  • Crumble the feta cheese on top, add the crushed walnuts and stir in balsamic vinegar.
  • Serve on your favorite toasted bread and enjoy!

  1. Rocky Road

INGREDIENTS:

  • 200 g good quality dark chocolate of choice
  • 1 Tbsp coconut oil
  • ~ 1 cup crushed tea biscuits
  • 2 handfuls of marshmallows
  • ~ 1/2 cup of mixed nuts and dried fruits
  • 4 squares white chocolate to drizzle on top (optional)

METHODS OF PREPARATION:

  • Melt the chocolate with the coconut oil.
  • Add the chocolate protein powder if using.
  • Add the rest of the ingredients and mix well.
  • Pour into a tray prepared with parchment paper.
  • Drizzle the melted white chocolate on top.
  • Put in the refrigerator to set and then slice. Enjoy!

  1. Cinnamon Roll Bread

INGREDIENTS:

For the bread:

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 4 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1 egg
  • 1/4 cup oil

For the cinnamon sugar swirl:

  • 1/2 cup sugar
  • 1 Tbsp cinnamon

METHODS OF PREPARATION:

  • Whisk together the flour, sugar, baking powder and salt.
  • Combine the milk, eggs and oil in another bowl and then add to the dry ingredients. Stir just until combined.
  • Whisk the cinnamon and sugar in a small bowl.
  • Pour half of the batter into a greased loaf pan and sprinkle with half of the sugar cinnamon mixture. Swirl with a skewer or a knife.
  • Top with the other half of the batter and then the rest of the sugar cinnamon mixture and swirl.
  • Bake in a preheated oven for around 45-50 minutes. Enjoy!

  1. Christmas Cake

INGREDIENTS:

  • 5 eggs
  • 1/2 cup sugar
  • 1 teaspoon cinnamon
  • 1 lemon rind
  • 1 Tbsp cognac + 1 Tbsp vanilla
  • 3/4 cup vegetable oil
  • 1 cup walnuts smashed
  • 1 cup raisins
  • 2 cups shredded carrots
  • 2 cups whole-wheat flour
  • 2 overflowing teaspoons baking powder

METHODS OF PREPARATION:

  • Whisk all the wet ingredients together and then add all the dry ingredients.
  • Mix well and place in a greased baking tray.
  • Bake in the oven at 160 degrees for 45 minutes.

  1. Fudgy Healthier Brownies

INGREDIENTS:

  • 1 cup all-purpose flour
  • 3/4 cup sugar
  • 1/4 cup cacao powder
  • 1/2 cup olive oil
  • 1/2 cup tahini
  • 2 ripe bananas
  • 1/4 tsp salt
  • 1 tsp vanilla
  • 1/2 cup chopped dark chocolate (or chocolate chips)

METHODS OF PREPARATION:

  • Mash the bananas then add the sugar and mix well.
  • Add the olive oil and tahini to the mixture and mix well until combined.
  • Add all the dry ingredients and mix well until fully incorporated then add the dark chocolate.
  • Pour in a prepared greased brownie pan and sprinkle more chocolate on top.
  • Bake in a preheated oven for around 20 minutes (check on it because it depends on your oven). Enjoy!

  1. Tomato Bruschetta

INGREDIENTS:

  • 5-6 tomatoes, finely chopped
  • 1/3 cups chopped basil leaves
  • 2 cloves garlic, minced
  • 1 Tbsp balsamic vinegar
  • 1 Tbsp olive oil
  • Salt and black pepper to taste
  • bread pieces, brushed with olive oil and toasted in the oven for 10-15 min

METHODS OF PREPARATION:

  • In a bowl, combine finely chopped tomatoes, chopped basil leaves and minced garlic. 2. Add the balsamic vinegar, olive oil and salt and pepper to taste.
  • Mix all the ingredients and let the mixture sit for an hour in the fridge to give time for the flavors to blend.
  • Top your toasted bread with the mixture and serve.
